Etymology

A sacrifice of meat  for the past year

, the simplified form of , combines the flesh radical (ròu, 'meat') with the phonetic (xī, 'past'), evoking a sacrifice of meat for the past year, the ancient winter sacrifice at the close of the lunar calendar. In the traditional character, the right side was the phonetic (liè). This year-end rite also lent its name to the twelfth month, and because the cold, dry weather made it the prime season for curing meat, eventually came to mean dried, salted, or smoked meats.
